Garden Tower Project: Week 2 Update

It’s been about two weeks since I set up my Garden Tower 2, and so far, all the seedlings have seem to have taken well to their new home. Particularly happy are the tomatoes, cucumbers, peas, and squash. The lettuce, while growing, looks a bit sad due to the constant 80°F-plus temperatures we’ve been having the past few weeks. Here’s what else we’ve seen.

My First Foray Into Vegetable Gardening

I wasn’t going to do it this year. I have a toddler and infant, and adding a garden into the care-taking mix was not going to happen. I’d have to built beds, pick out vegetables, deal with the garden center in quarantine… Then came Stop & Shop, my local grocery store, and The Garden Tower Project.

Most importantly Lime, as my dog Obi ate my last precious one 15 years ago. (Yes, I am aware no one needs 36 tubes of Lip Smackers. But for those three flavors? #worthit.)

This morning's snowy weather in the Hudson Valley This morning's snowy weather in the Hudson Valley called for a nice, hearty bowl of chili (@bettycrocker's Family Favorite Slow Cooker Chili with added mushrooms and two extra cans of beans). Accompanied by some delicious challah gifted to us on our local @buynothingproject group. Hit the spot!

Tonight's low of 28°F means the rest of the veggi Tonight's low of 28°F means the rest of the veggies get harvested. Turnips, radishes, and carrots will be roasted, while their greens and the mustard greens will be sauteed or steamed. Will see if tomatoes turn red; if not, salsa verde will be on the menu. Remaining basil and parsley were put in water to root. Small acorn and butternut squash will be pureed for baby food, while partially grown veggies will be tossed in the scrap bag for broth. Pleased with the @gardentowerproject bounty this year, but would have been lots more had the raccoons left it alone!
